    ½ knob of butter

    120 gr of belgium endive

    ½ onion

    25 gr of tapioca

    20 gr of ham

    4 to 6 months

Step by step recipe

  1. Remove the bitter cone from the endives and cut into slices.
  2. Cut the onion into pieces so it fills the flavour ball.
  3. Place the endives in the steamer basket.
  4. Place the flavour ball in the steamer basket.
  5. Put water in tank 2 and start cooking.
  6. Set aside the cooking juice.
  7. Pour the content of the basket into the blending bowl.
  8. In a saucepan, pour ½ litre of water. Sprinkle tapioca over the boiling water. Cook it over a low heat for around 7 minutes, stirring regularly.
  9. Place the tapioca into the blending bowl.
  10. Place the ham into the blending bowl.
  11. Place the butter into the blending bowl.
  12. Add a part of the cooking juice depending of the desired texture.
  13. Blend the bowl content.
